Wild Coyote Estate Winery is a family owned and operated winery in the Adelaida District of Paso Robles’s Wine Country. Established in 1995, Wild Coyote offers wine tasting of their estate varietals at their tasting room on Adelaida Drive where you can explore their wines while taking in the stunning views of the vineyards below. The winery is also home to a bed and breakfast for those that want to extend their stay, and a distillery where they produce Brandy Spirits, Limoncello-Grappa, Barrel Aged Grappa, and Infused Brandy!

ABOUT THE ADELAIDA DISTRICT
The Adelaida District is one of the eleven sub-districts that make up the larger Paso Robles American Viticulture Area, and home to some of the oldest grapes in Paso Robles’ Wine Country.
Although San Luis Obispo County has a long history of grape growing (and today Paso Robles is synonymous with wine country), commercial wineries were not introduced to the area until 1964.
That year Dr. Stanley Hoffman purchased 1,200 acres in the heart of what is now the Adelaida District, and with the help of influential winemaker André Tchelistcheff, Hoffman planted the vineyards that became Hoffman Mountain Ranch Winery, the first commercial winery in all of Paso Robles’s AVA.
Today the distinct terroir profiles (or growing conditions) of the eleven districts contribute to the production of over 40 varietals (the vast majority crafted from Cabernet Sauvignon, Roussanne, Zinfandel, Viognier, Merlot, and Syrah), and home to over 200 wineries for locals and tourists to enjoy and explore.
